Indiana chefs showcase pork culinary skills at 2020 Taste of Elegance

Chef Estaban Rosas from Black Market in Indianapolis took home the top award at Indiana Pork Producers Association's Taste of Elegance this week at the Indiana Roof Ballroom in Indianapolis. The premier chef's competition is a culinary event designed to inspire innovative and exciting ways to showcase pork on restaurant menus.

Each year, the Taste of Elegance program brings talented chefs together from across Indiana to compete in the prestigious event created to encourage chefs to use pork more frequently in creative, non-traditional ways. The event attracts nearly 400 pork farmers, ag industry leaders and dignitaries to downtown Indianapolis for an evening of elegance and celebration.

Rosas's winning entrée was a dish that included pork shoulder steak, charred onion, apple saba, glazed giant beans and braised pearl onions.

The 2020 Indiana Taste of Elegance featured some of the state's top chefs, including: 

  • Everardo Hernandez - Encore Catering, Indianapolis

  • Brian Pleasant - Crystal Catering, Indianapolis

  • Erin Gillum - Spoke & Steel, Indianapolis

  • Edward Sawyer - Taxman Brasserie and Taproom, Indianapolis

  • Tyler Carroll - Oakley's Bistro, Indianapolis

  • Jason Crouch - Embassy Suites, Noblesville

  • Estaban Rosas - Black Market, Indianapolis

  • Dean Sample - Northside Social, Indianapolis

  • Michael Gomez - Gomez BBQ, Indianapolis

  • Chip Huckaby - Smokehouse Catering, Indianapolis     

Rosas's winning entrée was a dish that included pork shoulder steak, charred onion, apple saba, glazed giant beans and braised pearl onions. As the Taste of Elegance winner, Rosas was presented with a check for $1,000 from Indiana Pork.  He will represent Indiana at the Midwest Pork Summit to be held in July in Minnesota.
